The Sweet Life: Earth Day Cookies
What better way to celebrate Earth Day than by baking cookies that look like Planet Earth? I know, planting trees and starting your garden may come to mind as some more obvious and better alternatives, but this recipe seemed perfect, since it uses ingredients from a company that cares very much about the environment.
Back in December, I received an awesome gift of sugar cookie mix from The Honest Company. Since we were so overloaded on Christmas cookies, I didn’t have the opportunity to try it out yet. It doesn’t expire until June, so I thought this was the perfect time to break out the organic cookie mix.
The ingredients for the sugar cookies were very simple. The mix from The Honest Company (ingredients shown below), a stick of unsalted butter, and one large egg.
Cut the butter into the cookie mix and mash until it is of cornmeal texture. In a separate bowl beat the egg.
Add the egg to the cookie mixture and mix with hands until it is combined as well as you can combine it.
It will be very dry, so the trick is to wrap it in plastic wrap and put it in the fridge for at least 30 minutes to allow it to hydrate.
Once you take the batter out of the fridge it’s time to roll out the dough!
I put wax paper down on the counter and threw some flour over it so that my dough wouldn’t stick. Then I rolled the dough out until it was about 1/4 inch thick.
Jessica Alba’s team tossed a snowflake cookie cutter into the mix, which I thought was so cute! But since spring is here, that baby was stored away and I used my nice oversized circle cookie cutter, to make planet Earth!
Once all the cookies were cut out, I transferred them to a greased pan and put them in the oven at 350 for 14 minutes. I think they might have been done even a little earlier, but they came out looking pretty good save for a few dark ones in the back.
I let them cool for about 15 minutes, while I got ready to decorate. I had made some buttercream earlier and separated it into a few different colors. I was figuring that I’d make a few cookies that were planet earth, and then a few floral cookies, so I made blue, green, yellow and pink buttercream.
After a few tries with planet earth, I realized that my green and blue icing was a bit too thick for the design I was going for. I had some cookie icing on hand as well, in blue and green, so that’s how I ultimately got the below design:

My family was excited to try the finished product, and the cookies were a huge hit! I thought I was more into cake/cupcake decorating, but the cookies were very fun to do as well. I hope you all have a very inspiring earth day and enjoy the rest of your week!
